Shrimp with Charred Peppers and Lime

Ingredients

  • 1 poundshrimp (large, peeled and deveined)
  • 3 wholebell pepper (assorted colors)
  • 2lime
  • 4 clovesgarlic
  • 3 tablespoonolive oil
  • ¼ teaspoonred pepper flakes
  • ·salt
  • ·black pepper

Prep

    Core and seed 3 bell peppers, then cut into rough 1-inch chunks.

    Mince 4 garlic cloves.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once shimmering, add the charred peppers and cook, stirring occasionally, for 5–7 minutes until they soften and develop darker spots. Transfer to a plate.

    Add the remaining 1 tablespoon olive oil to the pan. Add shrimp in a single layer and cook for 2–3 minutes until the edges turn pink and opaque. Flip and cook another 1–2 minutes until just cooked through.

    Return the peppers to the pan. Add minced garlic and red pepper flakes, toss constantly for 30 seconds until fragrant. Juice the limes over everything and toss gently. Season with salt and black pepper to taste.

    Divide between bowls and serve immediately with lime wedges on the side.

Spice Tips

For deeper heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A dash of hot sauce stirred in at the end adds sharp spice without masking the lime's brightness. Fresh cilantro scattered on top adds herbal complexity.
