Garlic Shrimp & Quinoa Skillet with Spinach
Ingredients
- 1 cupquinoa
- 2 cupsvegetable broth
- 1 poundshrimp (large, peeled and deveined)
- 3 cupsfresh spinach
- 4 clovesgarlic
- 3 tablespoonolive oil
- 1lemon
- ¼ teaspoonred pepper flakes
- ½ teaspoonsalt
- ¼ teaspoonblack pepper

Mince 4 cloves garlic.

Cut 1 lemon into wedges.

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add minced garlic and red pepper flakes, stirring for 30 seconds until fragrant.

Add 1 cup quinoa and toast for 2 minutes, stirring constantly.

Pour in 2 cups vegetable broth, bring to a boil, then reduce heat to medium-low. Cover and simmer for 12 minutes until quinoa is mostly tender and liquid is nearly absorbed.

Push quinoa to the sides of the skillet. Add remaining 1 tablespoon olive oil to the center, then add shrimp in a single layer.

Cook shrimp undisturbed for 2 minutes, then flip and cook 2 minutes more until pink and opaque.

Stir in spinach until wilted, about 1 minute. Season with salt and black pepper. Squeeze juice from 1 lemon over the skillet and stir gently to combine.

Spice Tips
For more heat, increase the red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A splash of hot sauce (sriracha or Louisiana-style) at the end adds brightness and kick.
