Garlic Butter Shrimp over Creamy Tomato Rice
Ingredients
- 1 poundshrimp (large, peeled and deveined)
- 4 tablespoonbutter
- 5 clovesgarlic
- 1½ cupwhite rice
- 3 cupchicken broth
- 1 can (14.5 oz)canned crushed tomatoes
- ¼ cupheavy cream
- 1 mediumyellow onion

Peel and devein 1 pound large shrimp if not already done.

Dice 1 medium yellow onion into small pieces.

Mince 5 cloves garlic.

Roughly chop about 1/4 cup fresh parsley for garnish.
Method

Melt 2 tablespoons butter in a large deep skillet over medium heat. Add the rice and stir constantly for 2 minutes until lightly toasted.

Pour in the chicken broth and canned tomatoes (with their juice). Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes until the rice is tender and most liquid is absorbed.

Stir in the heavy cream and a pinch of salt and pepper. Keep warm on low heat.

In a separate large skillet, melt the remaining 2 tablespoons butter over medium-high heat. Add the shrimp and cook for 1 minute per side until they just turn pink (do not overcook).

Push the shrimp to the side of the skillet, add the minced garlic and red pepper flakes, and cook for 30 seconds, stirring, until fragrant. Toss the shrimp to coat evenly. Season with salt and black pepper to taste.

Spoon the creamy tomato rice into bowls and top with the garlic butter shrimp and pan juices. Garnish with fresh parsley and serve immediately.
Spice Tips
This dish welcomes heat customization. For a mild version, omit the red pepper flakes. For moderate warmth, keep them at 1/4 teaspoon. For extra kick, increase to 1/2 teaspoon or add a pinch of cayenne to the shrimp pan. A squeeze of fresh lemon juice over the finished bowls brightens everything.
The rice can be prepped up to step 3 while the shrimp cooks, making this a true 25-minute dinner. Substitute unsalted butter if you prefer to control salt levels. For a lighter version, use whole milk instead of heavy cream.
