Shrimp Fried Rice with Lime & Ginger

Ingredients

  • 2 tablespoonsvegetable oil
  • 3 clovesgarlic
  • 1 tablespoonginger
  • 1 poundshrimp (large, peeled and deveined)
  • 3 cupscooked rice (day-old, chilled)
  • 1 cupfrozen peas and carrots
  • 2eggs
  • 3 tablespoonssoy sauce
  • 2lime
  • 4scallions
  • ¼ teaspoonred pepper flakes

Prep

    Mince 3 cloves garlic.

  2. 02

    Mince 1 tablespoon fresh ginger.

  3. 03

    Slice 4 scallions into thin rounds.

    Juice 2 limes and cut into wedges.

Method

    Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add shrimp and cook 2–3 minutes per side until pink. Transfer to a plate.

    Add remaining 1 tablespoon oil. Stir in garlic and ginger, cooking 30 seconds until fragrant.

    Push mixture to the side of the pan. Crack eggs into the cleared space and scramble until just set, about 1 minute. Break into small pieces and mix with the garlic–ginger.

    Add rice and frozen peas and carrots. Break up any clumps and stir-fry for 3–4 minutes until heated through.

    Return shrimp to the pan. Pour in soy sauce and juice from 1 lime. Toss everything together, cooking 1 minute.

    Taste and adjust seasoning. Divide among bowls and top with sliced scallions, red pepper flakes, and lime wedges.

Spice Tips

For a spicier kick, increase red pepper flakes to 1/2 teaspoon or add a dash of sriracha stirred into the soy sauce. Fresh cilantro makes an excellent alternative or addition to the scallions.
