Garlic Shrimp with Lemon Spinach and White Wine
Ingredients
- 1 poundshrimp (large, peeled and deveined)
- 5 ouncesfresh spinach
- 4 clovesgarlic
- 1lemon
- ½ cupdry white wine
- 3 tablespoonolive oil
- ·kosher salt
- ·black pepper
- ¼ teaspoonred pepper flakes
Prep

Peel and devein 1 pound large shrimp if not already done.

Mince 4 cloves garlic.

Juice 1 lemon.

Heat 1 1/2 tablespoons olive oil in a large skillet over medium-high heat. Season the shrimp with salt and pepper. Once the oil shimmers, add the shrimp and cook for 1 1/2 to 2 minutes per side until just opaque. Transfer to a plate.

Add the remaining 1 1/2 tablespoons olive oil to the pan. Add the garlic and red pepper flakes, stirring constantly for about 30 seconds until fragrant.

Pour in the white wine, scraping up any browned bits from the bottom of the pan. Simmer for 1 minute.

Add the spinach in batches, stirring until wilted, about 2 minutes total. Squeeze the juice of 1 lemon into the pan and stir.

Return the shrimp to the pan and toss gently to combine. Cook for another 30 seconds to warm through. Taste and adjust salt and pepper. Serve immediately.
Spice Tips
For subtle heat, the red pepper flakes are already in the recipe. If you prefer more warmth, add another pinch of cayenne or a few cracks more red pepper flakes. For herbaceous brightness, finish with fresh parsley or dill just before serving.
