Garlic Shrimp with Wilted Spinach and Lemon Butter

Ingredients

  • 1 poundshrimp (large, peeled and deveined)
  • 5 cupsfresh spinach
  • 4 clovesgarlic
  • 2 tablespoonsolive oil
  • 2 tablespoonsbutter
  • 1lemon
  • ¼ cupwhite wine
  • ·salt
  • ·black pepper
  • ¼ teaspoonred pepper flakes

    Mince 4 cloves garlic.

    Juice 1 lemon and have it ready.

Method

    Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.

    Add shrimp in a single layer and cook for 1 1/2 minutes per side until just opaque and starting to curl. Season with salt and pepper. Transfer to a plate.

    In the same skillet, add remaining 1 tablespoon olive oil and 2 tablespoons butter over medium heat. Add minced garlic and red pepper flakes, stirring for 30 seconds until fragrant.

    Pour in white wine, scraping up any browned bits from the pan bottom. Simmer for 1 minute.

    Add spinach in two batches, stirring for 1-2 minutes per batch until wilted.

    Return shrimp to the skillet, squeeze in juice from 1 lemon, and toss gently to combine. Cook for 1 minute more. Taste and adjust salt and pepper. Serve immediately.

Spice Tips

For more heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A handful of fresh basil or parsley stirred in at the end adds brightness.

Serve with crusty bread or over pasta to soak up the lemon butter sauce. The entire dish comes together in under 20 minutes.
