Garlicky Shrimp and Spinach with Crispy Breadcrumb Topping

Ingredients

  • 1 poundlarge shrimp (peeled and deveined)
  • 5 ouncesfresh spinach
  • 4 clovesgarlic
  • ½ cuppanko breadcrumbs
  • 4 tablespoonbutter
  • ½ cupwhite wine
  • 1lemon
  • ¼ teaspoonred pepper flakes
  • ·salt
  • ·black pepper

    Mince 4 cloves garlic.

    Cut 1 lemon in half for juicing.

Method

    Melt 2 tablespoons butter in a large skillet over medium heat. Add panko breadcrumbs and cook, stirring often, for 2–3 minutes until golden and fragrant. Transfer to a small bowl and set aside.

    In the same skillet, melt the remaining 2 tablespoons butter over medium-high heat. Add minced garlic and red pepper flakes; cook for 30 seconds until fragrant.

    Add shrimp in a single layer and cook for 2 minutes on the first side without stirring. Flip and cook for another 2 minutes until just opaque. Season with salt and pepper.

    Pour in white wine and scrape up any browned bits from the bottom of the pan. Simmer for 1 minute.

    Add spinach in handfuls, stirring gently until wilted, about 2 minutes. Squeeze in juice from 1 lemon and taste for seasoning.

    Transfer to a serving dish or bowl and top with the toasted breadcrumb mixture. Serve immediately.

Spice Tips

The pinch of red pepper flakes adds subtle warmth. For more heat, increase to 1/2 teaspoon or finish with a grind of fresh black pepper and a dash of hot sauce. A handful of fresh parsley stirred in at the end adds bright herbal notes.

This comes together in about 20 minutes. You can prep shrimp (if not already deveined) and mince garlic while the breadcrumbs toast. If fresh spinach isn't available, frozen (thawed and squeezed dry) works well.
