- 8 leavesfresh sage
- ·salt
- ·black pepper
- ¼ teaspoonred pepper flakes
Prep
- 01
Peel and devein 1 pound shrimp if not already done.
- 02
Mince 5 cloves garlic.
Method
- 01
Pat shrimp dry with paper towels and season generously with salt and pepper.
- 02
Heat 2 tablespoons butter in a large skillet over medium-high heat. When foaming, add sage leaves and cook for 30 seconds until crisp. Transfer to a plate.

Increase heat to high. Working in two batches if needed to avoid crowding, sear shrimp for 1 to 1 1/2 minutes per side until pink and cooked through. Transfer to a plate.
- 04
Add remaining 2 tablespoons butter to the pan. Add minced garlic and red pepper flakes, stirring for 30 seconds until fragrant.
- 05
Cut lemon halves into wedges, place cut-side down in the pan, and sear for 1 to 2 minutes until charred.
- 06
Return shrimp to the pan, toss gently to coat with butter and garlic, and transfer to a serving dish. Top with crispy sage leaves and squeeze charred lemon over everything. Serve immediately.
Spice Tips
For heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. If you like herbaceous notes, substitute fresh thyme or oregano for sage, or use a mix of both.
Serve with crusty bread to soak up the garlic-butter sauce, or over pasta or rice. Pairs beautifully with a simple green salad.
