Garlic Butter Shrimp with Creamy White Beans and Kale
Ingredients
- 1 poundlarge shrimp (peeled and deveined)
- 2 tablespoonolive oil
- 5 clovesgarlic
- 4 cupkale (packed, roughly chopped)
- 1 can (15 oz)canned white beans (drained and rinsed)
- ½ cupheavy cream
- 1lemon
- ¾ teaspoonsalt
- ¼ teaspoonblack pepper
- ⅛ teaspoonred pepper flakes (or to taste)

Mince 5 garlic cloves.

Roughly chop 4 cups packed kale, discarding thick stems.

Juice 1 lemon.
Method

Heat 1 tablespoon olive oil in a large, deep skillet over medium-high heat. Once shimmering, add shrimp, sprinkle with salt and pepper, and cook 2 to 3 minutes per side until just opaque. Transfer to a plate.

In the same skillet, add 1 tablespoon olive oil and the minced garlic. Sauté for 30 seconds until fragrant.

Add kale in batches, stirring until wilted, about 3 to 4 minutes total.

Stir in white beans and heavy cream. Simmer gently for 3 to 4 minutes, stirring occasionally, until the beans are warm and the sauce thickens slightly.

Return shrimp to the skillet and add the juice of 1 lemon and red pepper flakes. Toss gently and cook for 1 minute until everything is heated through. Taste and adjust salt and pepper. Serve in shallow bowls.
Spice Tips
For extra warmth, add a bigger pinch of red pepper flakes when you cook the garlic. For a hint of sweetness and deeper flavor, stir in 1 teaspoon of Dijon mustard with the cream. A grating of fresh Parmesan over the bowls adds richness.
