Garlic-Butter Shrimp with Crispy Breadcrumb Topping

Ingredients

  • 1 poundlarge shrimp (peeled and deveined)
  • 4 tablespoonunsalted butter
  • 4 clovesgarlic
  • ½ cuppanko breadcrumbs
  • 1lemon
  • ¼ teaspoonred pepper flakes
  • ½ teaspoonkosher salt
  • ¼ teaspoonblack pepper
  • 2 tablespoonfresh parsley

Prep

    Peel and devein 1 pound large shrimp if not pre-done.

    Mince 4 cloves garlic.

  3. 03

    Mince about 2 tablespoons fresh parsley.

    Cut lemon into wedges for juice and serving.

Method

    Heat 2 tablespoons butter in a large skillet over medium-high heat. Add minced garlic and red pepper flakes, stirring constantly for 30 seconds until fragrant.

    Add shrimp in a single layer, season with salt and pepper, and cook for 2 minutes without stirring.

    Flip shrimp, add remaining 2 tablespoons butter, and cook for another 1 to 2 minutes until pink and cooked through.

    In a small bowl, toss panko with half the minced parsley. Sprinkle over the shrimp in the pan and cook for 30 seconds.

    Squeeze lemon juice over everything, taste, and adjust seasoning. Transfer to a serving dish and garnish with remaining parsley.

Spice Tips

For more heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. For fresh brightness, stir in fresh basil or chives instead of parsley, or add a splash of white wine before the lemon juice.

Serve over rice, pasta, or crusty bread to soak up the buttery pan sauce. Shrimp cooks fast, so have all ingredients prepped before you start—timing is tight but the results are worth it.
