Garlic Shrimp with Charred Broccolini and Lemon
Ingredients
- 1 poundlarge shrimp (peeled and deveined)
- 1 poundbroccolini
- 6 clovesgarlic
- 1lemon
- 3 tablespoonolive oil
- ¼ teaspoonred pepper flakes
- ½ teaspoonkosher salt
- ¼ teaspoonblack pepper
- ¼ cupfresh parsley

Peel and devein 1 pound large shrimp if not already done.

Trim the thick ends from 1 pound broccolini.

Mince 6 cloves garlic.

Zest and juice 1 lemon.

Roughly chop 1/4 cup fresh parsley.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering, about 1 minute.

Add broccolini to the pan, season with 1/4 teaspoon salt and a pinch of pepper. Cook undisturbed for 3 minutes until the bottoms char, then toss and cook another 2 minutes until tender-crisp. Transfer to a plate.

Add the remaining 1 tablespoon oil to the skillet and reduce heat to medium. Add minced garlic and red pepper flakes, stirring constantly for 30 seconds until fragrant.

Increase heat to medium-high, add shrimp, and season with remaining 1/4 teaspoon salt and black pepper. Cook for 2 minutes on the first side without stirring.

Flip shrimp and cook another 1 to 2 minutes until they are opaque throughout and cooked through.

Return broccolini to the skillet, squeeze in the juice of the lemon, and toss everything together for 30 seconds.

Transfer to plates and garnish with fresh parsley. Serve immediately.
Spice Tips
For more heat, increase red pepper flakes to 1/2 teaspoon or add a pinch of cayenne. A splash of white wine (2 tablespoons) deglazes the pan beautifully and adds brightness if you have a bottle open.
