Shrimp with Charred Tomatoes and Crispy Garlic
Ingredients
- 1 poundlarge shrimp (peeled and deveined)
- 1½ poundscherry tomatoes
- 6 clovesgarlic
- 4 tablespoonsolive oil
- 1lemon
- ¼ cupfresh basil
- ·salt
- ·black pepper
- ¼ teaspoonred pepper flakes

Halve the cherry tomatoes lengthwise.

Mince or thinly slice the garlic cloves.

Cut the lemon into wedges for juicing.
Method

Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the halved garlic cloves and cook for 1 to 2 minutes, stirring occasionally, until golden and fragrant. Transfer to a small plate, leaving the oil in the pan.

Add cherry tomatoes to the same skillet and let them cook undisturbed for 3 to 4 minutes until the bottoms char and split. Stir gently and cook another 2 minutes. Season with a pinch of salt and red pepper flakes. Transfer to a bowl.

Add the remaining 2 tablespoons olive oil to the skillet over medium-high heat. Season the shrimp generously with salt and black pepper. Once the oil shimmers, add the shrimp in a single layer and cook for 2 minutes without moving.

Flip the shrimp and cook for another 1 to 2 minutes until they are pink and cooked through. Return the tomatoes and garlic to the pan and toss gently to combine. Squeeze the juice of 1 lemon over everything.

Remove from heat, tear the basil leaves and scatter over the top. Taste and adjust salt and pepper as needed. Serve immediately.
Spice Tips
Add a pinch more red pepper flakes for gentle heat, or finish with fresh thyme and a grind of black pepper for earthiness.
Serve over pasta, with crusty bread, or simply with a side salad. The shrimp cooks in under 10 minutes total, making this ideal for busy evenings.
