Garlic-Butter Spinach with Crispy Breadcrumbs and Lemon
Ingredients
- 10 ouncesfresh spinach
- 2 tablespoonbutter
- 4 clovesgarlic
- ⅓ cuppanko breadcrumbs
- 1lemon
- ·salt
- ·black pepper
- ¼ teaspoonred pepper flakes
Prep

Mince 4 cloves garlic.

Rinse and roughly chop the spinach if using large bunches (or leave whole if using baby spinach).
Method

Melt 1 tablespoon butter in a large skillet over medium-high heat. Add panko breadcrumbs and toast, stirring often, until golden brown and fragrant, about 3 minutes. Transfer to a small bowl and set aside.

In the same skillet, add the remaining 1 tablespoon butter and minced garlic. Cook over medium heat, stirring, for 30 seconds until fragrant.

Add spinach in batches, stirring until each batch wilts before adding more, about 3 to 4 minutes total.

Squeeze the juice from the lemon over the spinach and toss. Season with salt, pepper, and red pepper flakes to taste.

Transfer to a serving dish and top with the crispy breadcrumbs. Serve immediately.
Spice Tips
For warmth, stir in a pinch of nutmeg with the spinach. For heat, increase the red pepper flakes to 1/2 teaspoon or add a small pinch of cayenne.
