Garlic Spinach with Lemon and Pine Nuts

  • 10 ouncesfresh spinach
  • 4 clovesgarlic
  • ·lemon
  • ¼ cuppine nuts
  • 3 tablespoonsolive oil
  • ·salt

    Mince 4 cloves garlic.

    Wash and dry the fresh spinach thoroughly.

Method

    Heat 3 tablespoons olive oil in a large skillet over medium heat.

    Add minced garlic and cook for about 30 seconds until fragrant, stirring constantly so it doesn't burn.

    Add the fresh spinach in batches, stirring each batch down as it wilts before adding more. This takes about 3 minutes total.

    Toast the pine nuts in a dry pan over medium heat for 2 to 3 minutes, shaking occasionally, until lightly golden and fragrant. Transfer to a plate.

    Squeeze the juice of 1 lemon over the spinach and stir to combine. Season with salt and black pepper to taste.

    Transfer spinach to a serving dish and top with the toasted pine nuts. Serve warm.

Spice Tips

For a subtle heat, add a pinch of red pepper flakes when you toast the garlic. A small pinch of nutmeg adds warmth without spice. Fresh mint or basil stirred in at the end brightens the dish further.

This pairs beautifully alongside roasted chicken, pasta, or fish. Leftovers keep for 2 days in the fridge and reheat gently over low heat.
