Pan-Seared Chicken with Garlic Butter Spinach
Ingredients
- 1½ poundchicken breast (boneless, skinless)
- 8 ouncespinach (fresh)
- 4 clovegarlic
- 3 tablespoonbutter
- ½lemon

- 1 tablespoonolive oil

Mince 4 cloves garlic

Cut 1.5 pounds boneless, skinless chicken breast into even thicknesses (about ¾ inch), or pound gently to flatten

Halve 0.5 lemon

Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper on both sides.

Sear chicken for 6–7 minutes per side, until golden brown and cooked through (165°F at the thickest part). Transfer to a plate.

Add butter and minced garlic to the same skillet and cook for 30 seconds, stirring, until fragrant.

Add spinach in batches, stirring constantly until it wilts, about 2–3 minutes total.

Squeeze lemon juice over the spinach, season with a pinch of salt and pepper, and toss to combine.

Slice the chicken and serve over the garlic butter spinach.
Spice Tips
For warmth, add a pinch of red pepper flakes to the garlic butter. A dash of nutmeg brings earthy depth to the spinach. For brightness, finish with fresh lemon zest or a few crushed red pepper flakes on top.
