Crispy Tofu & Rice with Lime-Ginger Drizzle

Ingredients

  • 14 ouncesextra-firm tofu
  • 1½ cupswhite or brown rice
  • 3 cupswater
  • ·salt
  • 3 tablespoonsneutral oil
  • 2lime
  • 1 tablespoonfresh ginger
  • 3 tablespoonssoy sauce
  • 1 teaspoonhoney
  • 3scallion
  • 1 tablespoonsesame seeds

Prep

    Press extra-firm tofu between paper towels or a clean kitchen towel for 10-15 minutes to remove excess moisture. Cut into 1-inch cubes.

    Mince 1 tablespoon fresh ginger.

    Juice 2 limes.

    Slice 3 scallions, separating white and green parts.

Method

    Bring 3 cups water and 1/2 teaspoon salt to a boil in a saucepan. Add rice, stir once, then reduce heat to low. Cover and simmer for 15 minutes (or until water is absorbed). Remove from heat and let sit, covered, for 5 minutes.

    While rice cooks, heat 3 tablespoons oil in a large skillet over medium-high heat. When shimmering, carefully add tofu pieces in a single layer. Cook undisturbed for 4-5 minutes until the underside is golden and crispy. Flip gently and cook 3-4 minutes more until the other side is golden. Transfer to a plate.

    In a small bowl, whisk together the lime juice, minced ginger, soy sauce, and honey until combined.

    Fluff rice with a fork and divide among bowls. Top with crispy tofu, drizzle with lime-ginger sauce, and scatter sliced scallions and sesame seeds over the top. Serve immediately.

Spice Tips

For heat, stir in a pinch of red pepper flakes or a tiny drizzle of sriracha into the lime-ginger sauce. For deeper warmth, add a small pinch of white pepper or ground Sichuan peppercorns.
