Citrus-Glazed Turkey Breast with Thyme

Ingredients

  • 1½ poundsturkey breast (boneless, skinless)
  • 2lemon
  • 1lime
  • 3 sprigsfresh thyme
  • 3 clovesgarlic
  • 2 tablespoonsolive oil
  • 2 tablespoonshoney
  • 1 teaspoonkosher salt
  • ½ teaspoonblack pepper
  • ½ cupchicken broth

    Mince 3 cloves garlic.

    Juice 2 lemons and 1 lime.

Method

    Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Season the turkey breast with 1 teaspoon kosher salt and 1/2 teaspoon black pepper on both sides.

    Once the oil is shimmering, add the turkey breast and sear for 5–6 minutes per side until golden brown. Remove and set aside on a plate.

    Add the minced garlic and thyme sprigs to the same skillet, stirring for 30 seconds until fragrant.

    Pour in 1/2 cup chicken broth, then add the juice from 2 lemons and 1 lime. Stir in 2 tablespoons honey and scrape up any browned bits from the bottom.

    Return the turkey to the skillet, reduce heat to medium, and simmer for 8–10 minutes, spooning the glaze over the turkey halfway through, until it reaches 165°F at the thickest part.

    Transfer the turkey to a cutting board, tent loosely with foil, and rest for 5 minutes. Slice against the grain and serve drizzled with the pan sauce.

Spice Tips

For depth, add 1/4 teaspoon ground ginger or a pinch of red pepper flakes to the glaze. A handful of fresh cilantro or basil stirred in at the end brightens the finish even more.

Resting the turkey is essential—it keeps the meat moist and tender. Leftovers make excellent grain bowls or sandwiches and keep for up to 3 days refrigerated.
