Pan-Seared Turkey Breast with Lemon, Capers & Thyme
Ingredients
- 1½ poundsturkey breast (boneless, skinless)
- 1lemon
- 2 tablespoonsfresh thyme
- 3 tablespoonscapers
- 3 clovesgarlic
- 3 tablespoonsolive oil

Prep

Mince 3 cloves garlic.

Strip fresh thyme leaves from stems (or roughly chop if using thin sprigs).

Pat the turkey breast dry with paper towels. Season both sides generously with salt and pepper.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.

Add the turkey breast and sear for 6–7 minutes on the first side, until golden brown. Flip and sear the other side for another 5–6 minutes. The internal temperature should reach 165°F. Transfer to a cutting board and rest for 5 minutes.

While the turkey rests, add the remaining 1 tablespoon olive oil to the same skillet over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.

Stir in the capers and fresh thyme, cooking for 1 minute to warm through.

Squeeze the lemon juice into the pan and swirl to combine into a light sauce.

Slice the rested turkey breast against the grain into ½-inch strips. Arrange on plates and drizzle with the caper-lemon pan sauce.
Spice Tips
For a gentle warmth, add a pinch of red pepper flakes to the pan sauce. A dash of Dijon mustard stirred in at the end adds subtle tang if you prefer deeper seasoning.
