Pan-Seared Turkey Breast with Sage Brown Butter and Apple
Ingredients
- 1½ poundsturkey breast (boneless, skinless)

- 2 tablespoonsolive oil
- 3 tablespoonsbutter
- 8 leavesfresh sage
- 1granny smith apple
- ½ cupchicken broth
- 1 tablespoonapple cider vinegar

Pat the turkey breast dry with paper towels. Season both sides generously with salt and pepper. Dredge lightly in flour, tapping off excess.

Heat olive oil in a large skillet over medium-high heat. Once shimmering, add the turkey breast and sear for 6–7 minutes per side, until golden brown and an instant-read thermometer registers 165°F in the thickest part. Transfer to a plate.

Pour off most of the pan drippings, leaving about 1 tablespoon. Add butter and sage leaves; let the sage sizzle for about 1 minute until fragrant.

Add the sliced apple to the pan and cook for 2–3 minutes, stirring gently. Pour in the chicken broth and apple cider vinegar, scraping up any browned bits from the bottom. Simmer for 3–4 minutes until the sauce thickens slightly.

Slice the turkey breast and return it to the pan to warm through, about 1 minute. Taste and adjust seasoning. Spoon the sauce and apples over the turkey and serve.
Spice Tips
For warmth, add a pinch of ground sage or thyme to the flour dredge. A small pinch of cayenne pepper in the sauce adds subtle heat without overpowering the apple and sage balance.
